Saint Georges is a city canadian and the capital of the regional county municipality of Beauce-Sartigan in Quebec.

Saint-Georges is the largest city in terms of population of the Beauce in the region of Chaudière-Appalaches in the south of Quebec. It is the capital of the regional county municipality of Beauce-Sartigan.
Story
It was around 1679 that the first occupants settled permanently in the territory of Saint-Georges. They were Abenaki, Algonquian Amerindians, who spoke French and who were Catholics. They founded the village of Sartigan on the banks of the Famine river near its confluence with the Chaudière.
The first European to travel the Beauce was Father Gabriel Druillettes, a Jesuit who was ambassador to the King of France. He made three trips to Beauce: in 1646, in 1650 and in 1651. However, his visits did not lead to the establishment of settlers. On September 24, 1736, under the French regime, the two seigneuries forming the territory of Saint-Georges were granted. Marie-Thérèse de la Lande Gayon received the seigneury located west of the river while Nicolas-Gabriel Aubin de l'Isle received the one located on the east side. In 1768, the Aubert-Gallion seigneury passed into the hands of a English, William Grant. Nevertheless, its territory remained intact. For its part, the seigneury of Aubin de l'Isle was divided into three fiefs: the fief of Saint-Charles de la Belle-Alliance, the fief Sainte-Barbe de la Famine and the fief of Cumberland.
In 1808, Jean Georges Pfotzer, a German, became the fourth lord of Aubert-Gallion. It is he who is considered to be the true founder of the parish of Saint-Georges. It was in 1812 that the route Justinienne, the first route worthy of the name to go from Beauce to Quebec, was approved. Later, in 1830, it was the opening of Kennebec Road in all its length connecting Quebec to Maine. During this period, Saint-Georges was known under the toponym of Famine, while Nouvelle-Beauce was called Sartigan. It was during the winter of 1907 that Saint-Georges welcomed the first train to its station. We can assume that this advent triggered the start of real economic development in the city.
