Bollullos par del Condado is a Spanish city in the Huelva Province, in the Autonomous Region of Andalusia and center of the wine-growing region Condado de Huelva.

As numerous finds attest, the area was already settled in the Bronze Age. At the time of the Romans there was a small settlement named here Bubulcathat as part of the province Baetica to the domain of Onuba Aestuaria (Huelva) belonged. Wine was probably already being grown at that time.

During the Moorish rule the village was called Bolules or Bolulos, fell after being retaken by Alfonso X in 1253 Bullales to the Kingdom of Castile and León. At the beginning of the 14th century, Bollullos came into the possession of the Guzman family together with the region around Lepe.

  • The Iglesia de Santiago Apóstol, in the main square Plaza Sagrado Corazón, was originally built in the 15th century. Bollullos is known far beyond its city limits for its Bodegones. These are bodegas converted into restaurants that not only offer all kinds of delicacies from the kitchen and cellar for consumption on site, they are also sales outlets for wine and other local products. The region is known for its full-bodied, high-alcohol white wines, which, similar to sherries, are matured both oxidatively and reductively under a spontaneously arising layer of pile.

  • The Vino Generoso Condado Pálido is a light straw yellow, dry wine, similar to a Fino from Jerez de la Frontera or a Manzanilla. It is made from Listán de Huelva, Palomino Fino and Garrido Fino, the alcohol content is 15-17 percent and it matures for at least 3 years in the so-called Solera system.
  • The Vino Generoso Condado Viejo, made from Zalema, Listán de Huelva, Palomino Fino and Garrido Fino, is similar to Oloroso. It is amber to mahogany in color, the alcohol content is 15-22 percent and it is aged for at least 3 years in the Solera system.
  • The Vino Generoso de Licor produced. This (mostly sweet) liqueur wine is made by blending with grape must.

In addition to these wines, wines that have not been priced are also made without oxidative influence. The Vino Blanco Condado Joven is a dry or semi-dry, fruity white wine made from the Zalema grape. Red wines are also made, e.g. from Tempranillo or Syrah grapes.
The wines of the region also become brandy produced.

The region's specialties also include the excellent vinegarwhich as Denominación de Origen del Vinagre del Condado de Huelva as one of only three European types of vinegar that has a protected designation of origin.
