Language
In the city of Chiang Mai you can go reasonably well with English. Many Thais speak a variant of English known as Tinglish. However, catering staff often know very little English. Often they have only learned how the English word sounds and what the dish or drink is what it means.
In addition to the Thai script you enter the area of the former Lanna Kingdom also against the Lanna script, especially on the nameplates of temples.
There are also many mountain peoples who speak their own language, which is something you may encounter when traveling through the mountains. Of fried noodles you will not get far in this case, but the Thai Pad Thai is often still understood.
