Saigon offers the largest variety of Vietnamese and international food in the country. However bargains are getting harder to find, restaurant prices have risen by up to 30% a year due to a combination of high food prices, rising wages, and rising real estate costs. Land in the city center now sells for around USD16,000 a square meter so even a modestly sized restaurant is worth over USD 1 million. Authentic local food at bargain prices is one of Vietnam's glories, but it's getting harder to find in Saigon as the city becomes increasingly sophisticated and cosmopolitan.

The local food shows influences from the French colonial era. Bakeries have excellent baguettes, filled with cheese, ham and onion, or any combination thereof. Meat is used in many dishes - and in any of the many variations of pho. Be sure to try, in addition to pho the "Vietnamese omelets", with a delicious filling of your choice (various options included bamboo shoots and Enoki mushrooms, along with meat, shrimp, or both).
