Cantal department

Cantal is a department in the French, former, region Auvergne, now part of the region Auvergne-Rhône-Alpes. It bears the ordinal number 15 and borders (clockwise, starting in the north on the department Puy-de-Dôme, in the east to the département Haute Loire, in the southeast Lozère, in the south Aveyron, in the southwest to the department Lot, as well as in the west and northwest Corrèze. It is after the second highest mountain in the Massif Central, the Plomb you Cantal (1855 m), named.

Culinary specialties

  • The Pounti or Picoussel, is a kind of pie made from wheat flour, eggs, milk, chard leaves, bacon and plums. The finished pie is cut into slices and lightly seared. It goes well with poultry and other white meats, or is served only with lettuce to lighten it up. You can also drink a glass of cool white wine.
  • Fourme de Cantal, also just called Cantal, is a raw milk cheese. It is firm and sliced.
  • Almost disappeared in the late 1980s, the blonde lentil from Saint-Flour (lentille blonde de Saint-Flour) rescued by some local farmers. Their thin skin and flourless texture make them a very popular legume.
