Haute-Loire department

Haute Loire is a department in the French region Auvergne with serial number 43. The department borders (clockwise, starting in the north) on the departments Puy-de-Dôme and Loire, to the east and south-east Ardeche, in the southwest Lozère to the west to the department Cantal.

The green Le Puy lens, lentille verte du Puy, is protected in the EU under the Protected Designation of Origin (DOP) and in France as an Appellation d'origine contrôlée (AOC). The name may only be used for lentils that come from the prefecture of Le Puy (especially the municipality of Le Puy-en-Velay). The lentils have been grown in the region for more than 2000 years and are said to have particular culinary qualities derived from the terroir (in this case attributed to the volcanic soil of the region). They are praised for their unique peppery taste and ability to hold their shape after cooking. A big advantage is that they don't need to be soaked before cooking.
