In Alto Adige or South Tyrol, the influence of nearby Austria is very clear, resulting in typical mountain cuisine, simple and robust: lots of cold meats (würstel, speck); the schlutzer, ravioli made from rye flour; schlutzkrafen, another ravioli; the canederli, meatballs made from stale bread, speck, flour, garlic, onion and egg; the local sauerkraut, the bauernschmaus; vegetables such as potatoes or sauerkraut (crauto). Cheeses also evoke their Germanic neighbors even in their names: sterzinger, almkaese. For dessert, the Austrian influence is found in the strudel, the sachertorte, the zelten, the krapfen and the fruit tart, but amateurs will also feast on fruits of excellent quality, cultivated or wild (berries).
Honey, homemade jams and aromatic herbs are also famous there. In terms of drinks, the region offers its share of red wines (lagrein, vernatsch), white wines (sylvaner, traminer, müller thurgau, pinot blanc, pinot gris, gewürztraminer), eaux-de-vie and liqueurs, craft beers, local mineral waters, handcrafted fruit juices and syrups, milk and its derivatives, quite honorable. One of the typical dishes is gröstl, a potato and meat pie. There are also dishes based on game and freshwater fish.
