Eat
Like its neighbors, Trentino benefits from quality agricultural production to offer many recipes based on vegetables or cereals: we find polenta and gnocchi. Aging provides butter and cheese, which are used extensively in cooking; we can mention in particular the pestolato cheese, flavored with pepper and Trentine grappa, the toselà, a soft, fresh cheese, the Puzzone di Moena and the spressa delle guidicarie, a cheese typical of the mountain pastures. Among the cold cuts and meats, we can distinguish the speck of Trentino, the moretti, sausages ripened by adding wood anise, the mortandele, pork balls to eat raw or cooked, the carne salada, slices of beef put in brine with bay leaf, black pepper, juniper berries, garlic and rosemary, as good as it is cooked, pontesel, Trentino goulash, marinated trout and game.
In Alto Adige (South Tyrol), the influence of nearby Austria is very clear, resulting in typical mountain cuisine, simple and robust: lots of cold meats (würstel, speck), game, soups , the gröstl, a potato and meat pie, the canederli, dumplings made from stale bread, speck, flour, onion, garlic and egg, schlutzkrafen ravioli, schlutzer, ravioli made from rye flour , bauernschmaus, sauerkraut, vegetables such as potatoes or sauerkraut (crauto). The cheeses also evoke their Germanic neighbors, even in their names: sterzinger, almkaese. For dessert, the Austrian influence is found in the strudel and the sachertorte, but lovers of Trentino-Alto Adige will feast on cultivated fruits of excellent quality such as apples and chestnuts, but also wild (berries), as well. as fruit pies.
In terms of wines, the two provinces offer their share of reds (marzemino, teroldego, casteller, merlot, cabernet, guncina, caldaro, lagrein, vernatsch) or whites (nosiola, vernaccia, sylvaner, terlano, traminer, gewürztraminer, müller thurgau , chardonnay, pinot bianco, pinot grigio, vino santo trentino), quite honorable. Other drinks offered are craft beers, local mineral waters, local craft fruit juices and syrups, grappa trentine, local eaux-de-vie and liqueurs.
