- Katsuo no tataki (鰹 の タ タ キ) – This dish is Kōchi's specialty and no other place has it so good! Katsuo is a type of tuna called in French “bonite”. “Tataki” is the way to prepare it. The fish is kept over a fire and only the outer layer is cooked (from 3 mm at 1 cm deep), leaving the inside red and raw. After that, it's cut into thick, juicy slices that look like oversized sashimi. It is served with garlic and sliced onion, shiso (an Asian leaf with a distinctive and delicious taste), other toppings, a special sauce which may vary, and of course fresh wasabi. Once it's at your table, grab a slice with your chopsticks along with a generous helping of garlic, onion, wasabi, etc… Take it all in one bite. The best season for katsuo is summer and early fall when fish arrive off Kōchi after fattening up in the tropics during winter. We can find katsuo no tataki in many restaurants across Kōchi Prefecture; the gratin of them is Kuroson in the city of Kōchi.
