The town Lanzhou is the capital of the province Gansu and is on Huang He, the Yellow river. The city is surrounded by loess mountains, which not only provide fertile soil but also the raw material for dozens of brick factories. Along the Yellow River there are a number of industrial companies, e.g. the petrochemical industry, plus the power plants necessary for energy generation. It was not for nothing that Lanzhou received the questionable award in 1998 dirtiest city on earth.

Lanzhou is famous for its diverse noodle dishes.
- Lamian (拉面) is a type of Chinese noodle made from soft wheat flour. Lamian is made by twisting, stretching, and folding the dough into strands, making use of the weight of the dough. The length and thickness of the strands depends on how many times the dough is folded. The dough is worked intensively in the Lanzhou style. It is drawn in straight, quickly and without twisting or swaying. Some pullers regularly hit the noodle against their work boards to ensure even stretch and thickness. Flour is sometimes used to dust the strands and prevent them from sticking together.
- Lanzhou Lamian (兰州 拉面) Beef noodle soup consists of a spicy, clear broth, finely chopped beef, tender Chinese radish slices, lots of coriander and spring onions, deep red chili oil and handmade lamian noodles.
