Latacunga is the capital of the province Cotopaxi and is centrally located in the Highlands of Ecuador.

Chugchucara

The best known regional specialty is Chugchucara, elsewhere also as "Fritada" called, that is pork and here with a particularly large amount of crispy fried crust, it is served together with popcorn, avocado, plantains and other side dishes.
