kitchen
Belluno's cuisine has its origins in the Dolomites, with simple and humble dishes. Soups are often made with beans, barley, nettles or mushrooms. Primo (the first main course) often consists of vegetables, legumes or forest fruits. The secondo (main course) is often eaten rabbit, chicken, game or pastìn.
- The Lamon bean PGI is small, round, white-pink with purple stripes. It is used for soup and salad, or just cooked with onion and oil. It has been grown on the Lamon plateau since the 16th century.
- Pastìn is a typical Belluno dish. Minced meat with pork and beef, like sausage, is salted and spicy, or freshly prepared salami is used. The mass is eaten raw on bread or grilled. The sandwich with parsnip and grilled cheese, which is served at Belluno village festivals, is typical.
- The Panada is a typical dish made from stale bread with olive oil, salt and sage.
- The Gnocchi di Zucca are pumpkin dumplings that are served with grated smoked ricotta cheese and melted butter.

- The Montasio DOP is a typical hard cheese made from cow's milk from the Belluno region. But it is also produced in the provinces of Friuli Venezia Giulia and Treviso and partly in the provinces of Venice and Padua. After 2 months of ripening it is naturally lactose-free thanks to bacteria. Young it is eaten Montasio with bread, a little older it is used for gratin.
