To eat
Unlike the simplicity of classic Japanese food, which tries to highlight individual ingredients, Okinawa is a cuisine champur (mixed), where many ingredients can be used in a single dish to create complex and balanced flavors. Thanks to their notable Taiwanese influence, Okinawans also proudly proclaim that they use all parts of the pork except that the squeak and the pork appear in almost all the dishes, including pieces like ears, trotters and blood that are generally despised by the Japanese.
Other Okinawan ingredients include vegetables rarely seen on the Japanese mainland such as bitter melon.
A small pumpkin of gōyā (in front) and a spoonful of gōyā champurū (behind)
Noodles Sōki soba
Fish slices gurukun
