The Hop Asparagus Weeks take place from mid-March to early April. The tender root shoots of the hop plant are harvested by hand and offered as a specialty in local restaurants. They can only be used as long as the sprouts grow under the ground, protected from light. The growth is strongly dependent on the weather, which is why the harvest time, about three weeks, can only be determined shortly beforehand. When the shoots grow out of the ground, the harvest is over.
This is a traditional harvest dish Hop meal. It used to be the reward of the hops plucking after a successful harvest. First there was a hearty soup, then roast pork with bread or dough dumplings, sauerkraut and the hop pluck salad, which is potato salad with cucumber or endive.
At the Hallertau dumplings (Doagknedl) old rolls are diced and mixed with pancake batter (flour, eggs, milk and salt) and formed into dumplings. The dumplings soak in boiling water until they are cooked. As a side dish for roasting, they are fluffier than bread dumplings.
