cheese
- Comté is a typical Jura cheese. There are several types, depending on the ripening time, the rind of the cheese wheel is repeatedly rubbed with salt by the cheese maker. It should taste young or mild between 4 and 8 months, fruity between 8 and 16 months and also salty or old.
- The spread of the Tomme you Jura originates in the Jura Mountains is more local. It is a cow's milk cheese, pressed uncooked. It is shaped like a wheel with a grayish bark covered with white mold. It is characterized by its semi-hard paste and small holes, and contains 30% fat.
- Morbier is a semi-hard cheese with at least 45% fat. It has been produced since the 18th century and received AOC protection in 2000 and AOP protection in 2002. The peculiarity is that a horizontal strip of plant ash runs through the cheese. Today it is mostly produced industrially, but you can still find artisanal Morbier made from raw milk, partly from organic farming, which is mostly spicier.
- Mont d’Or is sold in a wooden box made of spruce. During the ripening process, the cheese takes on a light woody taste. The cheese may only be made between August 15th and March 31st and is only available during this period. Only milk from Montbéliard and Simmental cattle may be used for production.

Wine
- The Vin Jaune (yellow wine) is an oxidative wine from the Jura wine-growing region, made exclusively from the white grape variety Savagnin pressed. Its taste is similar to sherry, with the difference that it is not fortified. After fermentation, the wine must be stored in barriques for at least 6 years and 3 months. During this time, around 40% of the volume evaporates, which also explains the high price of the wine. It is bottled in a typical bottle, which is offered from € 30. You don't have to drink it right away, storage times of 40 to 50 years are possible.
- As Vin de PailleStraw wine is the name given to a wine whose grapes are dried on straw mats after harvest. As a result of the evaporation of the water, the sugar content rises. Only then are the grapes pressed and the result is a heavy, long-lasting wine with an alcohol content of 14% or more. In the Jura there is an old tradition of making wine in this way.

- Marc du Jura is a brandy eau-de-vie with an alcohol content between 47 and 55%, made in the Jura vineyards. The pomace brandy is usually obtained from the fermentation residues of the Chardonnay or Savagnin grape varieties through continuous double distillation. It is then matured in oak barrels for 2 to 5 years or longer.
