This culinary specialty is only served in months with the letter “r” in their name, i.e. from September to April. In addition to the well-known baked carp and blue carp, the bone-cut carp fillet has opened up further options for preparing the main fish of the Aischgrund. The inns are often referred to as "fish kitchens".
The inner genitals of the carp, also called milkers and roe, are considered to be a special delicacy when fried and are in the area as Ingreisch (Innards) known.
- The Aischgründer Carp Tasting Weeks take place every year in September and October. During these weeks, the participating inns offer special culinary methods of preparation for the carp.

Horseradish
There are still around 100 horseradish farmers in the Aischgrund. The horseradish root loves the wet clay soil in the area. In April the horseradish farmers plant the Fechser, the offshoots of the adult root. At the end of October, when the green leaves of the krens turn yellow, the harvest begins, which can last until Christmas. Some of the horseradish farmers are self-marketers, process the horseradish according to traditional recipes and sell the products in their farm shops and markets.
