Ellingen is an important site for dinosaurs, especially those of the species Plateosaurus engelhardti. In Roman times, the Rhaetian Limes ran here, and a fort (Sablonetum) was also located here.
The place was first mentioned in a document in 899 AD under the name "Elling". Walter von Ellingen and his wife Kunigunde founded a hospital in the 12th century. With this in 1216 the German medals enfeoffed. Since then, the Land Commander of the Teutonic Order Ballei Franconia has resided here. The rule of the knight order over the place ended only in 1796 with the occupation by Prussia. Ten years later, Ellingen - like large parts of Franconia - was handed over to Bavaria.
In the 1970s, the previously independent municipalities became 1 Massenbach and 2 Stopfenheim incorporated into Ellingen.
