As a base of the archdiocese Mainz already existed before 1300 because of its location on a basalt cone (cone) Zappenburg called castle on the medieval Königsstraße leading to Gottsbüren and the old Höhenstraße between kassel, Diemel and Weser. When the "holy corpse" was found near Gottsbüren in 1330, which made it a place of pilgrimage, the Zappenburg gained in importance. To protect and shield the pilgrims, the foundation stone for a new building was laid on April 19, 1334, which was completed in 1336. After clashes broke out in 1346, in which Mainz was defeated, the castle initially fell as a fief to Burkhard v. Schöneberg, whose family died out in 1428, and then on Hesse, after which it decays and is described in 1455 as desolate.

From 1490, Landgrave Wilhelm I had a hunting lodge built on the old foundation walls of the Zappenburg. When the castle was the seat of the office in 1582 Gieselwerder the office building that still exists today was also built. At the same time the name appears for the first time Sababurg on. Castle and the zoo founded by Landgrave Wilhelm IV in 1571, one of the in Europe, are surrounded in 1589 by a wall about four meters high and five kilometers long, which encloses an area of 130 hectares.

Occupied and badly damaged in 1628 by Catholic troops by Field Marshal Tilly during the Thirty Years' War (1618–1648), the palace complex fell into a wildly romantic overgrown condition, which later became the setting for the fairy tale sleeping Beauty the Brothers Grimm will. Since then the Sababurg is also internationally known as Sleeping Beauty Castle known. As described in the fairy tale, a five kilometer long and three meter high thorn hedge surrounded the castle complex from 1571 to 1591, which was supposed to keep wild animals from entering.

Once again devastated by French troops in the Seven Years' War, Landgrave Friedrich II rebuilt the Sababurg as a hunting lodge in 1765. After the west, east and south wings were demolished, the castle gradually fell into disrepair from 1826 onwards.

After the Second World War, from 1957 onwards, the Sababurg was gradually removed from the country Hesse restored and made accessible to the public, in 1961 a more upscale hotel and restaurant are set up in the castle complex. The first civil wedding room in Germany outside of a town hall has also existed in the castle complex since 1987, and was expanded in 2002. On October 17, 1971, after a long effort, the Sababurg zoo opened to visitors for the first time and has since developed into a tourist magnet with an increasing number of visitors every year.
