Oaxaca is a Mexican state on the southern Pacific coast Mexico, limited to the east by Chiapas, through to the north Puebla and Veracruz, through to the west Guerrero.

From the Pacific coast in the south, the land rises rapidly to the heights of the Sierra Madre del Súr, which can reach more than 3000 m. The capital is located in the Central Valley Oaxaca de Juarez. In the north it goes to the heights of the Sierra Mazateka. In the eastern part of Oaxaca is quite flat, there is the Isthmus of Tehuantepec. This isthmus, which is approx. 200 km wide, is to be expanded in terms of traffic with a rail connection from Salina Cruz on the Pacific to Coatzacoalcos in the Veracruz state. In the far east towards Chiapas the land rises again: this is where the Andes mountain ranges actually begin.

There are a total of 16 different Indian tribes in Oaxaca. The most important are the Mixtecs in the west and the Zapotecs in the central and eastern part of the country. The country is relatively poor, mostly agriculturally oriented. The main products are corn, peanuts and coffee. The well-known mezcal is also mainly produced in the state of Oaxaca and its neighbors. In addition, the population tries to gain a source of income through tourism and handicrafts (weaving, pottery).

  • A Chalupa (Spanish pronunciation: [tʃaˈlupa]) is a specialty of southern central Mexico. A thin layer of masa dough is pressed around the outside of a small mold, creating a concave container that resembles the boat of the same name. The result is then fried to make crispy, flat corn cups. These are filled with various ingredients such as shredded chicken, pork, chopped onions, chipotle peppers, red salsa and / or green salsa.
