Franconia has a large number of small distilleries that are traditionally family businesses, often as a sideline, or as a supplement to the agricultural business. High density of distilleries can be found in Upper Franconia in the Franconian Switzerland and in Lower Franconia in the Rhön. In any case, it is handicraft products with a local reference that contribute to the preservation of the diversity of the landscape and contribute to the preservation of the old orchards and old types of fruit.

Terms

fire

In the event of a fire, all of the alcohol in the product is produced by alcoholic fermentation. Sugary fruits are crushed and fermented, the resulting mash is then burned. The amount of schnapps obtained depends on the quality of the fruit. The resulting product is then referred to as water (e.g. kirsch, plum brandy) or brandy (e.g. fruit brandy).

ghost

To create a ghost, the fruits that do not have enough sugar (e.g. quince or asparagus) are soaked in neutral alcohol. The alcohol then removes the flavoring substances from the fruit. The mixture of alcohol and fruit is then distilled and the result is called a spirit. A ghost must contain at least 37.5% alcohol.

liqueur

Liqueurs are flavored spirits with a sugar content of at least 100 grams per liter (in the EU). They are made from a mixture of alcohol, flavor and sweetness. The aroma is mostly obtained from fruits or herbs. The minimum alcohol content is around 15%.

Bitter

Bitters are spirits that have been flavored with a primarily bitter taste. According to the EU regulation, a bitter must have an alcohol content of at least 15%. The bitter taste is mostly created by herbal extracts. Bitters are often offered as gastric bitters to allegedly promote digestion. Many bitters have so much sugar that they should actually be counted as liqueurs.

Eggolsheim

  • 4 Franconian distillery Geistreich - Brandies and spirits, liqueurs, fruity spreads, jellies and chutneys (relishes) made from home-grown fruit. Distillates and liqueurs can be filled directly from the balloon. Distillery tour € 25.00 / p. P., plus drinks, from 2 - 15 people.
  • 5 Feesenhof fruit farm & distillery - Fresh fruit according to the season, apples also in winter. Charlemagner is a "Franconian apple champagne". Own distillery with brandies, spirits and liqueurs. Brandy tasting with 4 brandies € 12 per person.

Streitberg

  • 8 Hans Hertlein old Kurhaus distillery - The main product is the herbal bitter liqueur Hertleins Streitberger Bitter. It was first produced in 1898. The ingredients are extracted from 53 herbs, berries, roots and bark and the herbal extract is stored in clay pots for months to mature and only then processed.
  • 9 Adler distillery Schütz - 45 different types of liqueurs and brandies, herbal distillates "Streitberger Schütz- und Alt-Bitter".

Oberschwarzach

  • 17 Winery, fine fruit distillery Jürgen Rebhann - Wines, liqueurs, e.g. rhubarb liqueur and brandies. Naturally cloudy fruit brandies are a specialty. Wine tastings, vineyard tours and own gastronomy on selected days.
  • 18 Werner Ebert winery - Fruit brandies made from plums, mirabelle plums, Williams-Christ pears, golden Elitschius apples and Pumuckel cherries.

Prichsenstadt

Randersacker

Rhön-Saale

Heritage gallery is a liqueur that is always self-made and made on the basis of "high percentage" with caraway as the main flavor note, industrially produced not available. Due to the (secret) additives, it is usually much milder than a pure caraway schnapps. One name interpretation is that of Pea yellow Colour.

Bischofsheim on the Rhön
