background

Badajoz is the largest Spanish province in terms of area, but it is quite sparsely populated. It has around 700,000 inhabitants, one in five of whom live in the provincial capital.

The province is traversed by a few chains of hills, but most of the landscape is quite flat and monotonous. In the northern half it is traversed from east to west by the Gzadiana, which usually has little water in the summer months. At the national border, it swings south and forms part of the border with Portugal.

Agriculture with irrigated areas dominates along the Guadiana and its tributaries, and the processing of agricultural products also plays a major role. Further south it is mainly pig and sheep breeding.

kitchen

That is part of the cuisine of the region Iberian pig (Cerdo Ibérico). This breed was bred in Roman times. Your ham is offered in several quality levels, depending on whether the animals were kept in the barn, whether they were fed acorns and herbs or whether they were able to live semi-wild in holm oak groves.
